Rice Noodle Stir Fry

Ingredients: 

  • 1 head of broccoli, cut in bite sized pieces  
  • About 4 large carrots, julienne  
  • 1 red onion, quartered and thinly sliced  
  • Shaved beef or a large steak, sliced thin 
  • ¼ cup cornstarch 
  • Rice noodles, amount to your liking
  • ¼ cup oyster sauce 
  • ½ cup soy sauce 
  • ⅓ cup sweet chili sauce, optional  
  • ¼ cup sesame oil,  plus more for cooking  
  • ¼ cup rice vinegar 
  • ¼ cup sriracha 
  • ⅓ cup brown sugar 
  • Seasonings: ginger, garlic powder, pepper, red pepper flakes 

Directions: 

  1. Coat the beef in cornstarch and cook in sesame oil in a pan. Once mostly cooked, remove and set aside. 
  2. Stir fry the broccoli, carrots, and onion until almost done in sesame oil. 
  3. Cook or soak the rice noodles according to package directions. 
  4. Whisk together the rest of the ingredients to make the sauce. 
  5. Combine beef, vegetables, and noodles in a pan and pour sauce in. Mix until everything is evenly coated and cook for about 5-10 more minutes or until the sauce is thick and clings to the veggies and noodles.
