Apple Cobbler

Apple Ingredients: 

  • 5 large apples (2 granny smith, 3 honey crisp) 
  • 3 T lemon juice 
  • ½ cup sugar 
  • ½ cup brown sugar 
  • 3 T flour 
  • 2 t cinnamon 
  • ¼ t salt 
  • 1 t vanilla 

Apple Directions: 

  1. Peel and thinly slice your apples. 
  2. Toss the apple slices in the lemon juice and then add them to a pan with high sides with everything else besides the vanilla. 
  3. Cook the apples for about 20 minutes, or until fork tender. 
  4. Take off the heat and stir in the vanilla. 
  5. Pour in an 8×8 pan and set aside while making the topping. 

Topping Ingredients: 

  • 1 ¼ cup flour 
  • ¾ cup sugar 
  • ½ t salt 
  • ½ t baking powder 
  • ¼ cup buttermilk 
  • 1 egg yolk 
  • ¼ cup butter, cold and cubed 
  • 2 tablespoons sugar, for topping 

Topping Directions: 

  1. Add the flour, sugar, salt, and baking powder to a bowl and whisk to combine. 
  2. Mix together the buttermilk and egg yolk and add it to the flour mixture, using a pastry cutter to cut it in together to form a shaggy dough (there will still be some flour). 
  3. Pour the flour mixture evenly over the apples. 
  4. Top evenly with the cold chunks of butter and then top with sugar. 
  5. Bake at 375° for about 35 minutes or until it is golden brown and bubbly. Broil for about 1 minute so it gets crispy.
