Babka

Dough Ingredients: 

  • 1 cup milk 
  • 1.5 t yeast 
  • 4 ¾ cup flour 
  • ⅓ cup sugar 
  • 1 t salt 
  • 10 T butter 
  • 3 eggs 

Chocolate Filling Ingredients: 

  • 6.5 oz. dark chocolate 
  • 8 T butter 
  • ¾ cup powdered sugar 
  • ½ cup cocoa powder 

Cinnamon Filling Ingredients: 

  • 8 T butter 
  • ¾ cup brown sugar 
  • 2 T cinnamon 
  • 1 t vanilla bean paste 

Simple Syrup (optional): 

  • ⅓ cup sugar 
  • ⅓ cup water 

Directions: 

  1. Bloom yeast in milk. Add all ingredients to a stand mixer and use the dough hook to mix and knead for 10-12 minutes on medium. 
  2. Cover and let proof for 1-2 hours or until double in size.
  3. Chocolate filling: melt butter and chocolate together. Mix in powdered sugar and cocoa powder.  Cinnamon filling: mix together all ingredients. (you can do one loaf one way and the other loaf the other way or just pick one).
  4. Deflate the dough. Divide in half and spread the chocolate onto each half. 
  5. Roll up the squares and then cut lengthwise. Twist the ropes together and let proof for 1 hour. 
  6. Bake at 350° for 45-50 minutes.
  7. Dissolve the sugar and water and brush over the top.  

Notes:

Can also top with a vanilla glaze drizzle (powdered sugar, vanilla, and a splash of milk or heavy cream). This is not traditional, but very yummy.
