Ingredients:
- 1 cup butter, softened
- 1 ¼ cup sugar, plus extra for rolling
- 1 egg & 1 yolk
- 1 T vanilla
- 2 ½ cups flour
- 2 t baking powder
- ¾ t salt
Directions:
- Cream together butter and sugar until light and fluffy.
- Beat in egg and yolk.
- Mix in vanilla.
- Mix in dry ingredients.
- Roll into balls and roll in sugar. These are best when rolled into 3 T balls to be a large cookie with a chewy center.
- Bake at 350° for 13-18 minutes or until the bottom is golden brown, but the middle is still slightly gooey. Let cool on the cookie sheet for about 5 minutes to finish cooking.
