Ingredients:

  • 1 cup butter, softened 
  • 1 ¼ cup sugar, plus extra for rolling  
  • 1 egg & 1 yolk 
  • 1 T vanilla 
  • 2 ½ cups flour 
  • 2 t baking powder 
  • ¾ t salt 

Directions: 

  1. Cream together butter and sugar until light and fluffy. 
  2. Beat in egg and yolk. 
  3. Mix in vanilla. 
  4. Mix in dry ingredients. 
  5. Roll into balls and roll in sugar. These are best when rolled into 3 T balls to be a large cookie with a chewy center. 
  6. Bake at 350° for 13-18 minutes or until the bottom is golden brown, but the middle is still slightly gooey. Let cool on the cookie sheet for about 5 minutes to finish cooking.
