Candied Sweet Potatoes

Ingredients: 

  • 5 pounds sweet potatoes 
  • 1 stick butter 
  • 1 cup brown sugar 
  • Juice of 1 orange 

Directions: 

  1. Boil sweet potatoes until done. 
  2. Let cool and peel. 
  3. Cut in circles or half circles. 
  4. In a skillet, melt butter and add brown sugar and orange juice. 
  5. Mix all ingredients together until consistency becomes caramelized, making sure butter and brown sugar are completely melted. 
  6. Add half of the potatoes and cook in some of the sauce, making sure both sides are coated.
  7. Remove and put into the baking dish. 
  8. Add the rest of the sweet potatoes and repeat steps 6 and 7. 
  9. Bake at 350° for about 30 minutes or until warmed (turn potatoes to coat if necessary).
