Ingredients:
- 5 pounds sweet potatoes
- 1 stick butter
- 1 cup brown sugar
- Juice of 1 orange
Directions:
- Boil sweet potatoes until done.
- Let cool and peel.
- Cut in circles or half circles.
- In a skillet, melt butter and add brown sugar and orange juice.
- Mix all ingredients together until consistency becomes caramelized, making sure butter and brown sugar are completely melted.
- Add half of the potatoes and cook in some of the sauce, making sure both sides are coated.
- Remove and put into the baking dish.
- Add the rest of the sweet potatoes and repeat steps 6 and 7.
- Bake at 350° for about 30 minutes or until warmed (turn potatoes to coat if necessary).
