Ingredients: 

  • 1 large boneless, skinless chicken breast (or 2)
  • ½ cup flour 
  • 1 egg 
  • 1 cup panko bread crumbs 
  • Mozzarella cheese 
  • Marinara sauce 
  • 1 red onion, quartered and thinly sliced  
  • Arugula 
  • Olive oil 
  • Neutral oil for frying
  • 4 soft rolls  
  • Seasoning: garlic powder, salt, pepper, red pepper flakes 

Directions: 

  1. Saute onion with seasonings until tender and caramelized. 
  2. Dress the arugula with olive oil and seasonings. 
  3. Butterfly, tenderizer, and section  your chicken breast so you have 4 pieces that are relatively the same size. 
  4. Set up a breading station with 3 separate bowls – flour, egg, and breadcrumbs, each seasoned with salt, pepper, and garlic powder. 
  5. Bread your chicken breasts and fry in oil that is around 350° until the chicken is 165° and crispy. 
  6. Add marinara sauce and mozzarella to the top of the chicken and broil until the cheese is bubbly. 
  7. Assemble the sandwiches.
