Ingredients:
- 2 cups cranberry juice (unsweetened)
- 6 oz. sweetened dried cranberries
- 1-2 cinnamon sticks, broken in half
- 1 cup sugar
- 2 gala apples, peeled and grated
- 2 t cornstarch
Directions:
- In a medium saucepan over medium heat, add the cranberry juice, cranberries, cinnamon stick, and sugar.
- Bring to a boil and let cook for 5 minutes.
- Add the apples and cook, stirring occasionally, until the cranberries have softened and the apples are tender, about 5 minutes
- Remove 8 oz. of the liquid, transfer to a small bowl, and whisk in cornstarch.
- Slowly add the cornstarch juice mixture to the cranberry mixture, stirring constantly.
- Cook for an additional 5 minutes.
- Remove from heat and let cool.
- Pour into a serving bowl and refrigerate until thick.
- Remove cinnamon sticks before serving.
This recipe is definitely adapted from a magazine or other website several years ago with my Grandpa while making Thanksgiving dinner, but I have no idea who. I HATE cranberry sauce, but this stuff is amazing and I hate calling it cranberry sauce because it is so much more than that and it is amazing on so many things!
