Leg of Lamb

Ingredients: 

  • 5 ½ lb. leg of lamb, tied in netting 
  • 20 cloves garlic 
  • Garlic powder to taste 
  • 10 fresh rosemary sprigs 

Directions: 

  1. Preheat the oven to 325°. 
  2. Cut 20 deep slits evenly spaced around the leg of lamb without cutting the netting. 
  3. Stuff a garlic clove into each slit. 
  4. Rub garlic powder over the lamb. 
  5. Place rosemary sprigs under netting evenly around the lamb. 
  6. Place lamb in the roasting pan. 
  7. Roast for about 2-2.5 hours or until it reaches 130°. 
  8. Cover in foil and rest until 135° before carving.
