Ingredients:
- 4 large eggs
- 1 package instant lemon pudding mix
- 1 package yellow cake mix
- ¾ cup and 3 T vegetable oil
- ¾ cup water
- 4 cups powdered sugar
- ⅓ cup fresh lemon juice
- 1 zested lemon
- 3 T water
Directions:
- Preheat the oven to 350°.
- Spray mini muffin tin with nonstick spray.
- Combine the cake mix, pudding mix, eggs, 3/4 cup oil, and water and blend well with an electric mixer until smooth (about 2 minutes).
- Fill each muffin tin about half full.
- Bake for 12 minutes and then remove from the pan.
- Mix together the powdered sugar, lemon juice, lemon zest, and water to make the glaze.
- Dip the cakes into the glaze while still warm or pour the glaze over the cakes.
