Lemon Blossoms

Ingredients: 

  • 4 large eggs 
  • 1 package instant lemon pudding mix 
  • 1 package yellow cake mix 
  • ¾ cup and 3 T vegetable oil 
  • ¾ cup water 
  • 4 cups powdered sugar 
  • ⅓ cup fresh lemon juice 
  • 1 zested lemon 
  • 3 T water 

Directions:

  1. Preheat the oven to 350°. 
  2. Spray mini muffin tin with nonstick spray. 
  3. Combine the cake mix, pudding mix, eggs, 3/4 cup oil, and water and blend well with an electric mixer until smooth (about 2 minutes). 
  4. Fill each muffin tin about half full. 
  5. Bake for 12 minutes and then remove from the pan. 
  6. Mix together the powdered sugar, lemon juice, lemon zest, and water to make the glaze. 
  7. Dip the cakes into the glaze while still warm or pour the glaze over the cakes.
