Mongolian Beef

Ingredients: 

  • 1 lb. beef, sliced at least 1/4 inch thin 
  • ¼ t salt 
  • ½ t pepper 
  • 2 T cornstarch, divided 
  • 1 T olive oil 
  • ¼ cup brown sugar 
  • ¼ cup soy sauce 
  • 2 cloves garlic, minced 
  • 2 tablespoons sweet chili sauce, optional 
  • ¼ t ground ginger 

Directions: 

  1. Whisk together the soy sauce, brown sugar, minced garlic, sweet chili sauce, ginger, and 1 tablespoon of cornstarch and set aside.
  2. Heat up the oil in a large pan.
  3. Toss beef with salt, pepper, and remaining cornstarch. 
  4. Add half the beef to the pan and cook for 1 minute per side until almost done. 
  5. Remove the meat and cook the second half of the beed the same way. 
  6. When the second half of the beef is done, add the first half of beef back to the pan and add the sauce, mixing well.
  7. Stir often and cook until the sauce thickens. 
  8. Serve with rice and broccoli. 

Notes: 

  • Use jasmine rice and cook it according to package directions, but using the same amount of coconut milk as the package says water.
