Rugelach

Pastry Ingredients: 

  • 2 sticks unsalted butter, softened 
  • 8 oz. cream cheese, softened 
  • ½ t salt 
  • 2 cups flour 

Pastry Directions: 

  1. Beat butter, cream cheese, and salt in a large bowl with an electric mixer until smooth.  
  2. Beat in flour. 
  3. Divide dough into 4 portions. 
  4. Shape each portion into a disk. 
  5. Wrap and chill until firm. 
  6. On a floured surface, roll 1 portion of dough into a 10 inch circle. 

Filling Ingredients: 

  • 1 stick unsalted butter or margarine, melted 
  • 1 ½ cups sugar 
  • 1 ½ t cinnamon 

Filling Directions: 

  1. Mix cinnamon and sugar together.  
  2. Brush the circle of dough with 1 tablespoon melted butter. 
  3. Sprinkle evenly with cinnamon sugar. 
  4. Cut the circle into 12 wedges. 
  5. Roll up from wide edge to point. 
  6. Place 2 inches apart on a baking sheet. 
  7. Bend into crescents. 
  8. Repeat with remaining wedges and dough. 
  9. Bake at 350° for 28 minutes or until golden. 
  10. Let cool and then brush with remaining melted butter and sprinkling with remaining cinnamon sugar.
