Ingredients: 

  • 1 pound spicy Italian sausage 
  • 1 medium onion, coarsely chopped 
  • 3 cups water 
  • 2 t dried basil 
  • 1 t dried oregano 
  • 1 zucchini, halved and sliced 
  • 2 cans tomato soup 
  • 1 can garbanzo beans 
  • 2 cups grated carrots 
  • Grated parmesan cheese 

Directions: 

  1. Cook the sausage and onion in a large pot until cooked through. 
  2. Stir in remaining ingredients except parmesan cheese.  Bring to a boil, then reduce heat to a simmer. 
  3. Simmer until vegetables are tender (about 20 minutes). 
  4. Serve topped with cheese and red pepper flakes.
