Ingredients:
- 1 pound spicy Italian sausage
- 1 medium onion, coarsely chopped
- 3 cups water
- 2 t dried basil
- 1 t dried oregano
- 1 zucchini, halved and sliced
- 2 cans tomato soup
- 1 can garbanzo beans
- 2 cups grated carrots
- Grated parmesan cheese
Directions:
- Cook the sausage and onion in a large pot until cooked through.
- Stir in remaining ingredients except parmesan cheese. Bring to a boil, then reduce heat to a simmer.
- Simmer until vegetables are tender (about 20 minutes).
- Serve topped with cheese and red pepper flakes.
