Stuffed Shells

Ingredients:

  • 24 oz. shells
  • 1 ½ lbs. Italian sausage
  • Olive oil as needed (to cook sausage)
  • 5-6 cups mozzarella cheese plus extras for top
  • 1 cup parmesan cheese
  • 1 cup pecorino romano cheese
  • 1 ½ large containers small curd cottage cheese
  • 2 eggs
  • 1 cup basil, chopped
  • 15 cloves of garlic
  • 2 t garlic powder
  • Fennel to taste
  • Pepper to taste
  • 4, 24 oz. jars of sauce  

Directions: 

  1. Cook shells until al dente.
  2. Brown Italian sausage in olive oil and drain.
  3. Mix together all ingredients (besides shells and sauce) with your hands.
  4. Add a layer of sauce to the bottom of baking dish.
  5. Add about 1 ½ spoonfuls of filling into each shell and line in a sauced dish (once layer is done, add another layer of sauce and add another layer of shells.
  6. Add a last layer of sauce over the shells and top with mozzarella.
  7. Bake at 350° until warmed and the cheese on top is melted.
