Ricotta Cookies

Cookie Ingredients: 

  • 4 cups (480g) flour 
  • 1 teaspoon baking powder 
  • 1 teaspoon baking soda 
  • ¼ teaspoon salt 
  • 16 tablespoons butter (226g), room temperature 
  • 1 ¾ cups (347) sugar 
  • 15 oz (425g) ricotta 
  • 2 eggs 
  • 1 tablespoon vanilla 

Cookie Directions: 

  1. Preheat to 350° and line a baking sheet with parchment. 
  2. Whisk together flour, baking powder, baking soda, and salt together in a large bowl. 
  3. Beat together the butter and sugar together until light and fluffy. 
  4. Beat in the ricotta then the eggs and vanilla. 
  5. Add the flour mixture and mix only until there isn’t any loose flour. Then turn the mixer all the way up and beat until just combined. 
  6. Roll the cookies  into 1 inch dough balls and bake for 8-10 minutes. 

Glaze Ingredients: 

  • 1 ¾  cup (199g) powdered sugar 
  • ¼ cup (60mL) milk 
  • 1 t almond extract 
  • Sprinkles 

Glaze Directions: 

  1. While the cookies are cooling, whisk together everything but the sprinkles and add more milk if necessary to get a thin enough consistency for dipping. 
  2. Once the cookies are cool to the touch, dip them in the glaze and top with sprinkles.
