Cookie Ingredients:
- 4 cups (480g) flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 16 tablespoons butter (226g), room temperature
- 1 ¾ cups (347) sugar
- 15 oz (425g) ricotta
- 2 eggs
- 1 tablespoon vanilla
Cookie Directions:
- Preheat to 350° and line a baking sheet with parchment.
- Whisk together flour, baking powder, baking soda, and salt together in a large bowl.
- Beat together the butter and sugar together until light and fluffy.
- Beat in the ricotta then the eggs and vanilla.
- Add the flour mixture and mix only until there isn’t any loose flour. Then turn the mixer all the way up and beat until just combined.
- Roll the cookies into 1 inch dough balls and bake for 8-10 minutes.
Glaze Ingredients:
- 1 ¾ cup (199g) powdered sugar
- ¼ cup (60mL) milk
- 1 t almond extract
- Sprinkles
Glaze Directions:
- While the cookies are cooling, whisk together everything but the sprinkles and add more milk if necessary to get a thin enough consistency for dipping.
- Once the cookies are cool to the touch, dip them in the glaze and top with sprinkles.
