Hummus

Ingredients:

  • 1 can chickpeas (about 1.5 cups)
  • 1 tablespoon baking soda
  • 1/4 cup tahini
  • 3 tablespoons olive oil + more for topping
  • 2 tablespoons lemon juice
  • 3 cloves garlic (or more if you want garlic hummus)
  • 1 teaspoon salt
  • 2 ice cubes
  • 4+ tablespoons water
  • Optional: paprika, red pepper flakes, parsley, roasted red peppers, any other flavorings you want

Directions:

  1. Boil chickpeas in baking soda and water for about 5 minutes. This will help to remove most of the skin from the chickpeas.
  2. Scoop out the skins from the chickpeas and then drain the chickpeas.
  3. Add the chickpeas and the rest of the ingredients besides water into a blender or food processor.
  4. Blend until smooth and then add the water 1 tablespoon at a time until it reaches the consistency and smoothness you prefer.
  5. Top with an extra drizzle of olive oil and any other toppings you would like.
  6. Serve with warm pita or naan or crudite.
