Ingredients:
- 1 can chickpeas (about 1.5 cups)
- 1 tablespoon baking soda
- 1/4 cup tahini
- 3 tablespoons olive oil + more for topping
- 2 tablespoons lemon juice
- 3 cloves garlic (or more if you want garlic hummus)
- 1 teaspoon salt
- 2 ice cubes
- 4+ tablespoons water
- Optional: paprika, red pepper flakes, parsley, roasted red peppers, any other flavorings you want
Directions:
- Boil chickpeas in baking soda and water for about 5 minutes. This will help to remove most of the skin from the chickpeas.
- Scoop out the skins from the chickpeas and then drain the chickpeas.
- Add the chickpeas and the rest of the ingredients besides water into a blender or food processor.
- Blend until smooth and then add the water 1 tablespoon at a time until it reaches the consistency and smoothness you prefer.
- Top with an extra drizzle of olive oil and any other toppings you would like.
- Serve with warm pita or naan or crudite.
