Coffee Cake

Crumb Ingredients:

  • 1 cup (200g) packed dark or light brown sugar
  • 1 and 1/4 cups (156g) all-purpose flour
  • 4 teaspoons ground cinnamon
  • 10 Tablespoons (145g) unsalted butter, cold and cubed

Cake Ingredients:

  • 2 and 1/4 cups (281g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (170g) unsalted butter
  • 1 cup (200g) granulated sugar
  • 3 large eggs
  • 1 Tablespoon vanilla extract
  • 1 cup (240g) sour cream
  • 1/4 cup (60ml) milk

Icing Ingredients:

  • 1 cup (120g) confectioners’ sugar, sifted
  • 1 teaspoon vanilla paste
  • 2 Tablespoons (30ml) heavy cream or milk

Directions:

  1. Preheat oven to 350 and line a 9×13 pan with parchment.
  2. Make the cinnamon crumb mixture: Combine the brown sugar, flour, and cinnamon together in a medium bowl. Cut in the chilled butter with a pastry cutter until the mixture is in pea-sized crumbs (grate the butter and gently mix in and break up the larger pieces with your hands). Refrigerate until needed.
  3. Make the cake: Whisk the flour, baking powder, baking soda, and salt together in a large bowl. Set aside. Beat the butter and sugar together on high speed until smooth and creamy, about 2 minutes. Add the eggs and vanilla, and beat on medium-high speed until combined. Beat in the sour cream. Mixture will be lumpy.
  4. Add the flour mixture to the wet ingredients, and beat on low speed until just combined. Finally, beat in the milk. Do not overmix this batter. The batter will be thick.
  5. Carefully spread about half of the batter into the prepared pan. Sprinkle 1 cup (about half) of the crumb mixture evenly on top. Carefully spread the remaining batter on top. Sprinkle the remaining crumb mixture evenly on top.
  6. Bake for around 45 minutes or until the cake is baked through. Allow cake to cool in the pan set on a wire rack for 15 minutes.
  7. Make the icing: Whisk all of the icing ingredients together. Drizzle over warm cake.
  8. Lift the cake from the pan using the overhang parchment paper around the sides and slice into squares.
