Ingredients:

  • 3 cups vinegar
  • 3 cups water
  • 1 cup sugar
  • 2 T salt
  • Vegetables of your choosing, sliced however you want.
  • Optional: seasonings/add ins of your choosing

Directions:

  1. Simmer the vinegar, water, sugar, and salt until the sugar and salt dissolve.
  2. Place cut up vegetables in jars.
  3. Add whatever seasonings and add ins you want.
  4. Pour liquid in the jars until all of the vegetables are submerged.
  5. Keep in fridge for several days. (Onions take about 2 days, pickles take about 3-6 days depending on the slices, jalapeños take about 1 week until they are a bit milder, etc.) You can keep shaking the jars and tasting them until they are as “pickled” as you like.

Notes:

Seasonings and add ins: garlic cloves or powder, peppercorns, paprika, dill, banana peppers mixed with cucumbers, chili powder, etc.
