Puff Pastry

Ingredients: 

  • 1 cup salted butter, frozen (227 g)
  • 2 cups flour (240 g)
  • 1 T sugar (12 g) 
  • 8-10 T ice cold water (120-150 mL) 

Directions: 

  1. Whisk together flour and sugar. 
  2. Grate the butter and add to the flour and sugar. 
  3. Toss until butter is coated in flour. 
  4. Slowly add the ice water into the mixture and fold together until it begins to clump together. 
  5. Knead the dough a few times so it stays together, but do not over-knead. 
  6. Roll out into a square about 1/2 inch thick and wrap with plastic. Refrigerate for 1 hour. 
  7. Lightly flour the dough and your rolling pin and roll out the dough to about 1/4-1/3 inch thick. 
  8. Fold the dough in thirds, rotate 90 degrees and repeat the process 4 more times. 
  9. Tightly wrap the dough in plastic again and refrigerate for at least 3 hours.
