Ingredients:
- 1 cup salted butter, frozen (227 g)
- 2 cups flour (240 g)
- 1 T sugar (12 g)
- 8-10 T ice cold water (120-150 mL)
Directions:
- Whisk together flour and sugar.
- Grate the butter and add to the flour and sugar.
- Toss until butter is coated in flour.
- Slowly add the ice water into the mixture and fold together until it begins to clump together.
- Knead the dough a few times so it stays together, but do not over-knead.
- Roll out into a square about 1/2 inch thick and wrap with plastic. Refrigerate for 1 hour.
- Lightly flour the dough and your rolling pin and roll out the dough to about 1/4-1/3 inch thick.
- Fold the dough in thirds, rotate 90 degrees and repeat the process 4 more times.
- Tightly wrap the dough in plastic again and refrigerate for at least 3 hours.
