Ingredients:
- 1 medium green cabbage, shaved/thinly sliced
- Half of a small red/purple cabbage, shaved/thinly sliced
- 2 large carrots, thinly sliced or grated
- 1/2 cup mayo
- 2 T apple cider vinegar
- 3 T dijon mustard
- 1 T honey
- 1/2 t celery seed
- 1/4 t salt
- Pepper, to taste
Directions:
- Thinly slice your veggies. Feel free to do more or less of any of the veggies, depending on your preferences. Green onions, shallot, and pineapple are great additions as well.
- Mix together the rest of the ingredients to make the sauce. If you want a thinner sauce, add a few tablespoons of water, one at a time, to thin it out.
- Pour the sauce of your vegetables and mix thoroughly. I like to add a little bit a time to make sure I do not add too much sauce because I am not a fan of soggy coleslaw and like the veggies to still be crisp. Best after sitting for 1+ hours.
