Coleslaw

Ingredients:

  • 1 medium green cabbage, shaved/thinly sliced
  • Half of a small red/purple cabbage, shaved/thinly sliced
  • 2 large carrots, thinly sliced or grated
  • 1/2 cup mayo
  • 2 T apple cider vinegar
  • 3 T dijon mustard
  • 1 T honey
  • 1/2 t celery seed
  • 1/4 t salt
  • Pepper, to taste

Directions:

  1. Thinly slice your veggies. Feel free to do more or less of any of the veggies, depending on your preferences. Green onions, shallot, and pineapple are great additions as well.
  2. Mix together the rest of the ingredients to make the sauce. If you want a thinner sauce, add a few tablespoons of water, one at a time, to thin it out.
  3. Pour the sauce of your vegetables and mix thoroughly. I like to add a little bit a time to make sure I do not add too much sauce because I am not a fan of soggy coleslaw and like the veggies to still be crisp. Best after sitting for 1+ hours.
